Autumn Recipe: Chicken Noodle Stew

It’s that time of year, we are looking to increase foods which are nice and wholesome and warming to our bod. We are also looking to increase foods to help keep our immune system strong. I love this dish and everyone in the house eats it, so it suits all ages.

Ingredients (Serves 2)

2 chicken breasts

2 carrots (chopped)

2 sticks of celery (chopped)

1 onion (chopped)

2 cloves of garlic (peeled and chopped)

1 red pepper (diced)

1 kallo/boullion stock cube

1 tbsp. of dried herbs (suggested: oregano and/or thyme)

1 inch grated raw ginger

Brown Rice/ Rice noodles.

Method

1.    Boil a pot of cold water. Once water is boiling, add chicken breasts. Add in the stock.

2.    Simmer for 15 minutes.

3.    Add in all the vegetables and herbs and cook for 10 minutes

4.    Add in brown rice noodles and cook for a further 5 minutes.

5.    It’s ready to serve.
